You will need: – 200 g of chicken fillet; – 1 orange; – 1 avocado; – 100 g of green beans; – 0,5 fennel; – a handful of lettuce leaves (for example, a mixture of oak leaf, frieze and arugula); – salt.

For dressing: – 3 tablespoons of olive oil; – 1 tablespoon of wine vinegar; – 1 tablespoon of brandy; – 1 tablespoon of grain mustard.

Boil the green beans, then place them in cold water with a slotted spoon and place them on a sieve. This technique will preserve the beautiful bright green color of the vegetable.
